CREAM OF PUMPKIN SOUP

INGREDIENTS:

  • ½ leek
  • ½ onion
  • 2 sticks of celery
  • 1 pumpkin taste
  • 1 can vegetable broth
  • Salt / pepper
  • 1 teaspoon grated ginger
  • 1 teaspoon olive oil
  • ¼ cup coconut milk (Optional)
  • 1/8 teaspoon curry or saffron and mustard seeds
  • 1 cup pistachios broken.

PROCESS:

  1. Cut all ingredients into small cubes, cooking with saffron, ginger, and mustard seeds.
  2. Then I blend it and put the fire again with vegetable broth to boil add the coconut milk, turn off heat and serve with pistachios and crouton.
